BEST ROLL DOUGH EVER2 T. yeast 3 eggs4 c. water ½ c. sugar ½ c. butter, melted 2 c. flour2 c. dry potato flakes 4-6 c. flour2 t. saltDissolve yeast in ½ c. warm water and set aside to activate. In large bowl mix together water, butter, potato flakes, salt, eggs, sugar and 2 c. flour. Add yeast and mix. Add remaining 4-6 c. flour until desired consistency for dough. Knead until elastic. Cover and let rise in warm place. Punch down when doubled and shape into desired rolls. Let rise and bake at 350 about 25-35 minutes or until done.

CLASSIC LIGHT AND AIRY ROLLS OR BREAD1 c. lukewarm water 3 t. salt2 t. sugar 2 T. vinegar2 pkg. instant dry yeast 3 ½ c. lukewarm potato water½ c. sugar 8-10 c. flour½ c. cooking oil Add yeast to 1 c. warm water and sugar and mix. Set aside for 10 minutes. In large bowl put ½ c. sugar, oil. Salt, vinegar and potato water. Add yeast mixture and stir in flour. Knead on until not sticky. Place in greased bowl and let rise until double. Knead down and let rise again. Make into buns and place in greased baking sheets. Let rise until double and bake at 400 for 15-20 minutes.
